Ahhhh Pure Joy Home!! It’s been a minute, but I love you and I miss you! Guys I don’t know, it’s been really hard for me to blog lately. Writing is so theraputic to me, and I haven’t given myself the time but it’s definitely something I want to get back to more regularly. Even if it’s nothing important, just getting out some thoughts and feelings on a more regular basis, it needs to happen.
I made this chicken last night, and the light outside was still pretty, so I set that casserole right on the carpet in front of our window and snapped a photo 🙂 Shortly after this, I got a hate DM on instagram but we’ll save that for another day. Messages like that SUCKKKK to get and I’m working on letting it go but it still tugs at my head, luckily not my heart. Back to the chicken.
You need some bone-in breasts, you could add some thighs and legs to make it more of a full meal for more people but it was just the 4 of us so I used the breasts. I placed them in a casserole, salted them on both sides, poured some olive oil on top, squeezed the juice of one whole lemon all over, put a bunch of fresh rosemary around, sprinkled some pepper and popped them in the oven at 375 for 30 minutes. I took them out, checked to see if they were cooked through with a fork and knife, they were, and then I put the oven on broil to crisp up the skin. I broiled them for about 4-5 minutes and took them out.
I served them with white rice and peas and it was a hit for the whole family! SO easy and perfect for a weeknight.
