APPLE CHUNK DONUTS {BAKED}

Hello Shorelies! How are you?? I’m sad that I haven’t been posting as much lately — I miss you here but work has been a lot and figuring out how to balance both has been a bit of a struggle for me lately…any bloggers out there ever feel like that?

It’s been a beautiful fall here in Connecticut and there is nothing I love more than the fresh brisk air outside and being cozy inside with my family 🙂 With all of the crazy from everyday, I managed to get in a little kitchen therapy over the weekend and try out a new recipe I found online for apple cider donuts. I adapted them into into baked apple chunk donuts and they were so simple and super delicious – our family and friends couldn’t believe they were homemade!

I found the original recipe from saidshesaidhe blog:

1 1/2 cups all-purpose flour
1 3/4 teaspoon baking powder
1/4 cup sugar
1/4 cup brown sugar, lightly packed (I didn’t have any so I used maple syrup)
1/2 teaspoon salt
1 teaspoon nutmeg (didn’t have any so I left this out)
1/3 cup butter, cold and cut into small pieces
1 egg
1/4 cup milk
1 1/2 cups apple, peeled and cored, bite size pieces

1/4 cup butter, melted
1/3 cup sugar
1 teaspoon cinnamon

1. Preheat oven to 350 degrees.
2. Whisk flour, baking powder, sugars, salt and nutmeg in a large bowl.
3. Add cold chopped butter and cut the butter with the flour mixture until it resembles coarse crumbs. (I used a few pulses in the food processor)
4. In a separate bowl, beat the egg and mix in the milk. Fold in the chopped apples.
5. Add egg mixture to flour mixture and stir (but do not overmix).
6. Fill greased donut pan about 3/4 full.
7. Bake for 15-18 minutes.
8. Unmold each donut gently and lightly brush with melted butter.
9. Dunk in a bowl of sugar/cinnamon mix.

SO yummy!! I highly recommend.

We’re currently in Phase 1 of our Costa Rican ad We’re currently in Phase 1 of our Costa Rican adventure. This is the two week decompression period where we train our bodies and minds to slow down (this is more for me than anyone else), and let me tell you, I’m lapping it up.  We’re spending all day outside at the beach, going to bed early, eating lots of fresh fruit and healthy foods, swimming in the ocean, I’m working out and meditating in the mornings, and having fun together. For someone who is usually always in high gear, this part is my gift to myself 🐚 

We are staying at a beautiful place in papagayo with @exclusiveresorts and it feels very luxurious and restorative. 

The kids are already thriving. Being together 24/7 comes with its arguments and fights but they are learning how to just be with each other and with their crazy little brother. They’re helping a lot with him, learning a little Spanish, surfing, writing in their journals, and meeting kids from all over the world who are staying here as well. 

I’m letting us get pampered for this phase, and it feels really good.

Recently, I downloaded the Melissa Wood health app Recently, I downloaded the Melissa Wood health app @melissawoodtepperberg @melissawoodhealth and so far I’m loving the workouts. I try and do one every morning. They’re super quick so sometimes I do two. I like that they are gentle but hard. They incorporate a lots of yoga, pilates, breathing, stretching, balancing and all that good stuff. You can see from the videos I’m pretty shaky in the first couple clips, that balance is tough but I’m building up my strength, I can feel it 💪🏻
