Lemon Parmesan Pasta with Crispy Kale

I made this delicious lemon parmesan pasta with crispy kale for myself the other night when Brian Sr. was out at a work event. As easy as it would have been to pour a bowl of cereal and call it a night, I wanted to enjoy my “me” time with a nice glass of white wine and some pasta while I binge watched Southern Charm.
The dish is super simple and so satisfying, Brian devoured the leftovers when he got home 🙂 
All you need to do is: 
1) Boil your spaghetti in some salted water
2) Sauté a bunch kale in a pan with some olive oil, a garlic glove, salt and lemon. 
3) Drain your pasta, pour some olive oil on top and load on the freshly-grated parmesan cheese (the more cheese the better in my world, but that’s a personal preference).
4) Put your kale on top, pour some wine, and enjoy!
