The other night I had a bunch of ripe avocados and we had just had tacos so I needed to come up with something fast. Enter our Italian babysitter, Giovanna. She is the best with our kids and equal in the kitchen. Lots of dinners lately have been thrown together with what’s in the fridge and I asked her if she knew of any good recipes with avocados. This is when she told me about avocado pasta.
Ingredients:
- 2 ripe avocados, halved, seeded and peeled
- 1/2 cup fresh basil leaves
- 2 cloves garlic
- 2 tablespoons freshly squeezed lemon juice
- Kosher salt and freshly ground black pepper, to taste
- 1/3 cup olive oil
- 4 tablespoons of store bought pesto
- 1 cup cherry tomatoes, halved
Blend together all ingredients (except for the tomatoes) in a nutribullet (I use this little machine more than anything in my whole kitchen, well except for the coffee maker) or food processor until creamy and serve with spaghetti OR zoodles (zucchini noodles, has anyone made these? I’m dying to try them but just need the spiralizer) with the cherry tomatoes and a little fresh basil and parmesan on top. Brian Jr. who does not eat anything green asked for seconds, WIN!!!
