Jalapeno Watermelon Margaritas

I bought a HUGE watermelon the other day at the grocery and after serving it to my kids for 4 days straight with only half gone, I looked at the other giant half and decided to mix something up for the weekend. A couple of years ago when I was pregnant I went to Laguna Beach to visit my bestie, Cher, and everyone was drinking watermelon jalapeño margs (this is when it is NOT fun to be pregnant). I was salivating looking at them so I ordered a virgin and was pleasantly surprised because the jalapeño gave it a kick I was missing from the tequila. 

We were having friends over this weekend, so it was the perfect excuse to get concocting in the kitchen and experimenting with this refreshing summer cocktail. Don’t worry, my kids were napping, there were piles of laundry, I had no idea what we were going to eat for dinner, and my house was a disaster but somehow this was more important. 

I’m SO glad I did because I AM OBSESSED with these margaritas and I think you will be, too. 

 

 

So here is what you do:

Cut up a bunch of watermelon and blend it in a nutri-bullet or juicer, whatever you have, until you get a water-like consistency, about 1 1/2 or 2 cups worth. Take a sip, HOW GOOD??

Next squeeze the juice out of about 2-3 limes until you get 3/4 cup. Put aside. 

Take about a 1 inch slice of jalapeño and drop it into your lime juice. Put that together in the bullet or juicer. Taste it, not spicy enough? Add more. 

Then add your tequila. I added 3/4 cup and put everything into my cocktail shaker with ice and shook it up so it was nice and cold. I salted the rims with pink salt and served it over ice with the limes, jalapeños and a piece of watermelon for garnish. SO GOOD PEOPLE. Let me know what you think!
