Hi Friends!! I posted this recipe to my instagram stories last night and wanted to get the recipe “down on paper” for you all to refer to because it’s SO easy and SO delicious.
Here is what you need:
- 1/2 cup of olive oil
- 1/2 cup of red wine vinegar OR lemon
- 2 heaping tablespoons of seedy dijon mustard
- 1 teaspoon salt
- 1 carton of halved grape tomatoes
- Whatever chicken you want, I used chicken legs (drumsticks) and boneless breasts because that’s what I had. Bone-in is best because the bone gives the dish a lot of flavor.
Here is what you do:
Make a dressing with the oil, vinegar or lemon, and dijon mustard. Cut your grape tomatoes in half. Line your chicken up in a casserole dish and put all of the tomatoes in the dish as well. Pour the dressing on top and pop into a pre-heated oven (375) for 25 minutes or until the chicken is cooked through.
Serve with cous cous and roasted kale or green salad and you’re good!! Such an easy dinner that everyone will love!
