6 Ingredient Tuscan Soup

I was browsing pinterest the other day for easy weeknight meals and I came across this one which looked SO easy, and SO good. I made this five ingredient tuscan soup in my dutch oven, but it would be just as good, and less maintenance in a slow cooker. My kids loved it, which to be honest I was shocked about. Also, the leftovers on Day 2 were even better! It thickens up the longer it cooks, and even in the fridge overnight, YUM. Just a note, if you want it more soupy, just add a little chicken broth (about a half a cup, to a cup) and a little tomato sauce (like half a cup). I did that at the end of the cooking process because it had reduced so much while we were busy and it could have made it even tastier. I’m telling you, you are going to LOVE this easy dish!

Ingredients

You’ll want a little freshly ground pepper and freshly grated parmesan.

Steps

Sauté your sausage until cooked.

In your pot or slow cooker, add the sausage, cream cheese, diced tomatoes, and chicken broth. If you’re working in a dutch oven, let it all come to a boil and then simmer for an hour or so, until all the cream cheese is dissolved into the sauce. Add the tortellini and the spinach and cook for an additional five minutes on a low boil. That’s IT!! You’re done and ready to serve. Add some fresh basil if you have it on the top, freshly grated parmesan and freshly ground pepper.
