When we’re in Florida, one of the first places we go to eat is Hog Snappers. It’s a “Floribbean” restaurant and they have this salad called the Melove, and I’m obsessed. I always order it with blackened shrimp and I recently tried to recreate it at home. It’s not the same exact salad but it does the job.
- arugula (a few handfuls)
- black beans
- avocado
- fresh corn off the cob
- red onion
- cherry tomatoes (halved)
For the dressing I just do a simple lime, olive oil, salt & pepper combo. Top with grilled chicken, shrimp, or steak!
