Celebrating National Chip & Dip Day with Cape Cod Potato Chips

In honor of national Chip & Dip Day (which is today!!) I am partnering with Cape Cod® Potato Chips to bring you my hummus dip recipe (see below) here on Pure Joy Home.  My family has always loved Cape Cod® Potato Chips (I mean who doesn’t!?) so this is really exciting to be able to partner with a New England based brand that has been a staple in my home (even as a kid!) for so many years.

We try to eat as healthy as we can but chips are something we ALL love.  Now, we don’t eat this snack sitting on the couch everyday in front of the TV as you might be thinking when you hear “bag of chips” (no judgement here if you do!).  I still want to promote a healthy lifestyle for my kids so I make sure to incorporate yummy treats that are still made with high quality ingredients and Cape Cod Waves™ Potato Chips delivers on that!  We usually have these chips when we are enjoying a snack together after school, taking the snack size bags to the beach/pool, a picnic outside with sandwiches and chips on the side and always as one of my go to appetizer options for backyard BBQs in the summer.

Brian has been super into making recipes lately so given it’s National Chip & Dip Day, we decided we had to go all out and create a simple hummus recipe together!!  I needed something dairy-free and since my kids don’t know about all the traditional dip recipes I decided to go healthy, gotta get those veggies in! Our hummus paired perfectly with the new go-to Cape Cod Waves™ Potato Chips, their new design of the classic chip is perfect for any dip and gives the best, most satisfying crunch 🙂  As with all Cape Cod® products it’s made simple, with high-quality ingredients and custom kettles, which give them their distinct kettle-cooked flavor.  If you’re not familiar with the Cape Cod® brand I’ve included their story below including how they make the chips and the variety of flavors the new Cape Cod Waves™ Potato Chips come in!

OK now for our hummus!  I’ve outlined the simple recipe below and recommend dipping the Cape Cod Waves™ Sea Salt Potato Chips!!  Chip+dip party anyone?? How can you say no??

Simple hummus:
  • 1 15-ounce can chickpeas, rinsed
  • 1 clove garlic
  • 1⁄4 cup olive oil, plus more for serving
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons tahini (sesame seed paste; optional)
  • salt to taste
  • fresh red pepper cut into tiny pieces and mixed in

Blend all of the ingredients together in a food processor and voila!

We’re currently in Phase 1 of our Costa Rican ad We’re currently in Phase 1 of our Costa Rican adventure. This is the two week decompression period where we train our bodies and minds to slow down (this is more for me than anyone else), and let me tell you, I’m lapping it up.  We’re spending all day outside at the beach, going to bed early, eating lots of fresh fruit and healthy foods, swimming in the ocean, I’m working out and meditating in the mornings, and having fun together. For someone who is usually always in high gear, this part is my gift to myself 🐚 

We are staying at a beautiful place in papagayo with @exclusiveresorts and it feels very luxurious and restorative. 

The kids are already thriving. Being together 24/7 comes with its arguments and fights but they are learning how to just be with each other and with their crazy little brother. They’re helping a lot with him, learning a little Spanish, surfing, writing in their journals, and meeting kids from all over the world who are staying here as well. 

I’m letting us get pampered for this phase, and it feels really good.

Recently, I downloaded the Melissa Wood health app Recently, I downloaded the Melissa Wood health app @melissawoodtepperberg @melissawoodhealth and so far I’m loving the workouts. I try and do one every morning. They’re super quick so sometimes I do two. I like that they are gentle but hard. They incorporate a lots of yoga, pilates, breathing, stretching, balancing and all that good stuff. You can see from the videos I’m pretty shaky in the first couple clips, that balance is tough but I’m building up my strength, I can feel it 💪🏻
