You need the ingredients you see pictured here. A couple things,
For the chicken, I buy these strips of organic chicken and cook them all so we have leftovers. I think there are about 15 that come in the tray. I bake them in the oven at 375 for 10-15 minutes on a baking sheet lined with parchment paper (no clean up), drizzled with olive oil, lime juice, salt and pepper, that’s it! So easy.
For the salsa, you need a pint of grape or cherry tomatoes, half of a white onion, a bunch of fresh cilantro, salt, pepper, a little olive oil, and the magic sauce, Franks Red Hot. I use about 1-2 tablespoons or more. BEST. SALSA.EVER.
Then it’s time to build your chicken and arugula tacos!! This part is great as you can add anything extra you want and have the kids join in to make their own. Such a fun and interactive way to make dinnertime fun.
