Brian Here! March madness is upon us, so wanted to share this delicious chicken cutlet sandwich with roasted red peppers, mozzarella and sautéed broccoli rabe to enjoy while cheering for your favorite team.
Sandwich Ingredients:
- 1-2 lbs. boneless chicken breast
- 1 cup cooking oil (for the cutlets)
- 3 eggs
- 2 cups of Italian seasoned bread crumbs
- 1/2 cup parmesan cheese
- 1 tbsp. parsley
- Fresh mozzarella cheese
- Roasted Red peppers
- 1 bunch broccoli rabe
- 3 tbsp. extra virgin olive oil (for the broccoli rabe)
- 2 cloves of garlic, sliced
- Salt & Pepper
- French Baguette
Chicken Cutlet Instructions:
- Split the chicken breast in half, cover with plastic wrap and pound with meat mallet to 1/2 inch
- Crack you eggs in a medium bowl and add a pinch of salt, pepper and parsley then whisk
- Combine your Italian seasoned bread crumbs with the parmesan cheese in large bowl then mix
- In a large skillet add your cooking oil over medium heat (we love the Always Pan from Our Place; use PUREJOYHOME10 for 10% off everything)
- Dip your chicken in the egg mixture and coat with your bread crumb mixture
- Place in the hot skillet and cook until 165 degrees (usually 4-5 mins per side) then place on paper towel
Broccoli Rabe Instructions:
- Cut off the ends (1/2 inch) of your broccoli rabe and rinse in cold water
- Heat extra virgin olive oil in a large skillet over medium heat and add sliced garlic
- Add broccoli rabe, a pinch of salt and pepper and saute’
Sandwich Time:
- On the bottom half of your french baguette add your chicken cutlets, broccoli rabe and sliced mozzarella and place in the oven on broil for 2 mins or until cheese is melted (put top half of the baguette in as well to toast)
- Remove sandwich from over and add roasted red peppers and sprinkle with olive oil and balsamic vinegar
