Ever since I was a teeny girl, anisette cookies were my favorite. They have such a unique taste and I think it was the little rainbow sprinkles my grandmother put on them that got me. This year, I attempted them for the first time and they came out amazing! It’s been two days and I still smell the anisette every time I walk into the house!
- 1 and 1/2 stick of softened butter ( 3/4 cup)
- 3/4 cup white sugar
- 4 eggs
- 2 teaspoons anise extract
- 3 tablespoons of milk
- 3 cups of flour
- 5 teaspoons of baking powder
- 1 teaspoon salt
- 2 cups confectioners sugar
- 2 tablespoons of milk
Cream the butter and sugar in a mixer and add the eggs, one at a time. Add anise extract and mix. Add 1/3 of the dry ingredients (pre-mix these) into the wet mix along with one tablespoon of milk as you mix. Repeat until all the dry ingredients are gone. The batter will be sticky.
Flour a baking sheet and your hands, and roll little balls, a little smaller than a golf ball and place them on the baking sheet.
Bake for 10-12 minutes in a 350 degree oven.
Let them cool on a rack and then dip them face down into the frosting mixture and top with your favorite sprinkles!
