Hello, and HAPPY Tuesday!! I have a fun recipe for you today 😎 It’s a tomato soup that you can either make creamy or not (I chose the creamy with a simple tweak, but it would be really good either way)
I had a bunch of tomatoes from the garden that were about to go bad so I decided to make this soup and I’m SO glad I did. I made it on a rainy Sunday and served it with these grilled cheese croutons which everyone devoured!
- 2 cups chicken broth
- 1 teaspoon salt
- 2 cream cheese, optional
Steps
In a saucepan or dutch over, sauté the chopped tomatoes and onion in a tablespoon of oil until fragrant. Add the chicken stock and let it come to a boil. Turn the heat down and when it’s no longer boiling grab a stick blender and blend it all together right in the pan until it’s a nice texture…tomato soup texture!
Remove from the pan and make a roux, which is butter and flour whisked together and add your tomato soup back in. Add salt to taste.
*Optional, add 2 tablespoons of cream cheese at the very end to make this a bisque – SO GOOD!!!
