Garden Herb Pork Loin

I shared this garden herb pork loin recipe in stories last week and since then I have had so many requests for it! It’s a super easy weeknight recipe that the whole family will enjoy. I used my new Dutch Oven from Amazon for this and it worked so good. I highly recommend scooping it up because it’s very affordable and is a really good Le Creuset dupe. We served the pork loin with broccoli and rice, but you can pick your favorite veggies. Enjoy!

Ingredients

  • 2 cups of chopped fresh herbs (basil, parsley, rosemary and cilantro – what I had)
  • 1/4 cup of olive oil
  • Juice of one lemon
  • 1 tablespoon salt
  • fresh ground pepper

Place all of the ingredients into a ziplock bag along with the pork and let that marinate for as long as possible. I only had 20 minutes but you could do an entire day!

Preheat oven to 375 degrees

Heat up your Dutch oven on medium for about 2-3 minutes so it’s nice and hot when you brown your pork.

Pour all of the contents from the ziploc bad into the Dutch oven and cook each side until browned (about 3-4 minutes each side). You can look to see when you get that toasty color.

Once it’s browned, place the lid on the Dutch oven and put into the preheated oven for 15 minutes or so, just until the internal temperature is 160. I like this thermometer to check on my meat!

Let sit for 5-10 minutes to lock in all the juices.

You’ll have a beautiful broth with this so make sure when you’re slicing and serving your pork you pour that on top!
