Homemade Rustic Bread – Crunchy Crust, Airy Center

GUYS! Found a new hobby, baking homemade bread. I’ve probably made twenty batches of this homemade rustic bread over the past two weeks looking for one that was JUST right and I finally nailed it. I love when bread has a really rustic, crunchy crust but the inside needs to be super light and airy. Is there anything better than getting warm bread straight out of the oven with a little butter on top?? NO. Actually olive oil is pretty good, too, and even jam. Let’s rephrase that, what’s not good on bread??

For this homemade bread recipe you’re going to need a dutch oven. It’s what get the crust to be super “crusty”, it cooks the bread beautifully. I have this one and it’s my FAAAVORITE. Best wedding gift ever. This is also a no-knead recipe, you don’t need to let it rise overnight, and it’s EASY. It will take 2.5 hours start to finish though, just a warning. But you you’re not actively working on it the whole time, you leave it and come back to it. I’d say it’s about 20 minutes of active work  🙌

Ingredients

  • 2.25 tsp. active dry yeast
  • 1 tsp sugar
  • 1.25 cups warm water
  • 1 tsp kosher salt
  • 2.5 cups All-Purpose Flour, plus extra for dusting

Instructions

  • Combine yeast, sugar, salt, and warm water in the bowl of a stand mixer fitted with a dough hook (you could also mix this dough by hand if you like – just use a large mixing bowl
  • Let the mixture sit for about 5 minutes to absorb together.
  • Add flour to bowl, a little at a time and mix on low speed until all flour is incorporated and dough has just started to pull away from the sides of the bowl. (If you’re mixing by hand, mix until ingredients have just come together and form a smooth dough).
  • Lightly flour all sides of your dough (don’t mix the flour in – it’s just to keep the dough from sticking!) and turn it over inside the mixing bowl to coat with flour on all sides. Cover with a dish towel and let rise on the counter for about 1 hour, until dough has just about doubled in size.
  • Your dough has risen 🙌 Something about that feels so good, it’s like you’ve done something really good because it worked! Flour your hands and take it out of the bowl and make it into a nice round loaf. This step seems unnecessary but something about it worked for me. You’re going to flour another bowl and place your little ball in that bowl for another half-hour or so. It’s going to be sticky and that’s okay, just keep flouring your hands so it doesn’t stick too much them.
  • While your bread is sitting for this last 30 minutes, place an empty dutch oven (with the lid on) in your oven and heat to 460 degrees F.
  • When the oven is hot, you’re ready for oven placement. Use oven mitts to pull the dutch oven out and remove the lid.
  • VERY CAREFULLY (without burning yourself!) place it your bread into the hot dutch oven.
  • Put your oven mitts back on, pot the dutch oven lid back on the pot, and slide the whole thing back into your hot oven.

COOK

  • Cook bread for 25 minutes until the bread is nice, browned, and crispy looking.
  • When bread is done, use oven mitts to pull the pot out of your oven.
  • Use a long spatula to lift the bread out of the dutch oven and onto a cooling rack. Let cool just enough so you don’t burn your hands and dig in.

We’re currently in Phase 1 of our Costa Rican ad We’re currently in Phase 1 of our Costa Rican adventure. This is the two week decompression period where we train our bodies and minds to slow down (this is more for me than anyone else), and let me tell you, I’m lapping it up.  We’re spending all day outside at the beach, going to bed early, eating lots of fresh fruit and healthy foods, swimming in the ocean, I’m working out and meditating in the mornings, and having fun together. For someone who is usually always in high gear, this part is my gift to myself 🐚 

We are staying at a beautiful place in papagayo with @exclusiveresorts and it feels very luxurious and restorative. 

The kids are already thriving. Being together 24/7 comes with its arguments and fights but they are learning how to just be with each other and with their crazy little brother. They’re helping a lot with him, learning a little Spanish, surfing, writing in their journals, and meeting kids from all over the world who are staying here as well. 

I’m letting us get pampered for this phase, and it feels really good.

I try and do one every morning. They’re super quick so sometimes I do two. I like that they are gentle but hard. They incorporate a lots of yoga, pilates, breathing, stretching, balancing and all that good stuff. You can see from the videos I’m pretty shaky in the first couple clips, that balance is tough but I’m building up my strength, I can feel it 💪🏻
