Hi Friends! Wanted to share our new 2020 Joy Family Chili Recipe! This recipe works perfectly because it’s not too spicy for the kids, can be made in advance, and even in the instant pot. It’s also VERY easy to make and can be done in under 30 minutes. This chili is hearty, full of flavor, and NOT watery. The perfect dinner to have mid-week when you don’t have much time, or on a Sunday for football!
Here is what you need:
- 1/4 cup olive oil
- 1 yellow onion
- 2 red bell peppers
- 2 gloves garlic
- 1 1/2 lb. of ground beef
- 1 tbs tomato paste
- 1 28-ounce can crushed tomatoes
- 1 16-ounce can of fire roasted tomatoes (or plain diced, fire roasted is better)
- 2 cans of kidney beans
- 1 can of black beans
- 1 tbs salt
- 1 tbs chili lime seasoning powder
- 1 tbs of chili powder
Get out your dutch oven, I’ve been using this one from Amazon and I love it! It’s a Le Creuset dupe and honestly it’s just as good, I use it all the time.
Sauté your onions, garlic, and peppers in olive oil. Once they are translucent, add your ground beed with the chili powder, salt, and chili lime seasoning! Brown the beef until it is fully cooked through. Add your tomatoes and beans and let that chili cook on the stove top on low for as long as you want, but as little as 30 minutes. The longer it sits and cooks on low, the more flavor will be absorbed!
Serve with sour cream and shredded cheese!
