Peppermint Brownie Bark

Grace and I had so much fun this week making this delicious peppermint brownie bark! We wanted to come up with something different than our usual Christmas cookies and Grace was begging for brownies so I killed two birds with one stone 🤣

The recipe is SUPER easy! I love using Ghiradelli brownie mix, there is something about it that knocks all other brownie mixes out of the park! You simply bake the brownies according to the instructions on the box and add a drop or two of peppermint vitality essential oil, but instead of using the usual baking dish, you use a baking SHEET and get it as thin as possible to give it that “bark” look. Also, cook the brownies according to the box instructions for a 9 x 13. Even though the batter is spread thinner, the cooking time will make it so it’s crunchy on the outsides and a bit softer on the insides. It also really helps to line the baking sheets with parchment paper (sprayed with a non-stick baking spray). I love these pre-cut parchment sheets, one less step you need to take!

While the brownies are cooling, melt white chocolate in the microwave by heating in 30-second intervals, stirring after each interval. Place melted chocolate into a ziplock bag and set aside until the brownies are completely cool. Cut a very small corner off of the ziplock bag. Drizzle white chocolate all over the brownies in a quick zigzag pattern, and add a smashed candy cane sprinkle!
