Guys. I LOVE a good salad, seriously love. The more I can add, the better. The other night we had a “fridge clean-out” salad and it came out so delicious I knew I had to share it with you.
Here is what you’re going to need:
- 1 cup of quinoa (cook according to directions on package)
- baby romaine lettuce (this is my favorite lettuce, it’s softer and tastes better than Spring Mix IMO)
- grape tomatoes
- persian cucumber
- hard-boiled eggs
- feta cheese
For the Dressing:
- juice of one lemon
- 1/2 cup of olive oil
- seedy Dijon mustard
- salt + pepper to taste
