Happy Humpday friends! I’ve got a super easy weeknight bolognese to share with you that my entire family devoured two nights in a row. I made an adjustment to my usual bolognese by using canned sauce, instead of the whole peeled tomatoes I usually use. We signed up for the Hello Fresh service which is AWESOME, and this is an adapted recipe of one of theirs we made a few weeks ago. Ingredients
- 1 cup of chopped carrots
- 1 cup of chopped onion
- 1 cup of chopped celery
- 3 16-oz cans of tomato sauce (not like premade jarred sauce, just tomato sauce. You can find it where the sell the canned tomatoes)
- 1 tablespoon of tomato paste
- 1 cup of beef stock
- 1 lb of chopped meat (I use 85% / 15%)
I chopped up carrot, celery and onion and let that sauté in olive oil for a few minutes and then added my chop meat until that was cooked through. I drained the excess fat by tilting the pot and collecting it with a large spoon. Once that was done I added three 16 oz. cans of organic tomato sauce (I found these at Trader Joe’s but I know Hunts makes a great one as well). I stirred that around and then added one tablespoon of tomato paste and about 1 cup of beef stock and let it simmer on the stove top with the top off for about a half-hour. Also, add salt and pepper to taste and if you have a bay leaf, throw that in as well. During this time I boiled my spaghetti and the sauce thickened to the perfect texture. As soon as the spaghetti was ready I served it topped with sauce and fresh parmesan, everyone loved it, especially that little Gracie girl.
