The Fall Salad of my Dreams

Ingredients

For the potato
one medium sweet potato cut into 1-inch cubes
sprig of fresh rosemary
1 tbls EVOO
salt + pepper
Salad
1 package of arugula
½ cup dried cranberries
½ cup crumbled goat cheese
red onion pieces (as desired)
½ fresh blueberries
½ cup walnuts
Dressing
¾ cup of EVOO
¼ cup fresh squeezed lemon
1 clove of garlic minced
1 tsp of real maple syrup
½ tsp salt
fresh black pepper

Once you have all of your ingredients, here is what you’re going to do.

Preheat oven to 385
coat sweet potato in 1 tbs of EVOO, salt pepper (a bowl and your hands works for this)
remove the rosemary “leaves” from the sprig and add them to your potato bowl
roast them for 25 minutes
In the meantime, add all of your salad ingredients to a bowl. I like to add the different ingredients in sections.
For your dressing, grab a mason jar and whisk all of the ingredients together.
Once your sweet potato comes out, add to your salad and pour on the desired amount of dressing.
