Not sure what holiday I love more, Christmas or Cinco de Mayo…kidding, kind of. FYI the date is observed to commemorate the Mexican Army’s unlikely victory over French forces at the Battle of Peubla on May 5, 1862. In the United States, Cinco de Mayo is sometimes mistaken to be Mexico’s Independence Day—the most important national holiday in Mexico—which is actually celebrated on September 16 ??
So earlier this week I was thinking of what type of yummy margarita I could make to celebrate this special day and since I’m obsessed with grapefruit and lime I decided to mix the two with some good blanco tequila and it was DELICIOUS.
All I did was squeeze one half of a grapefruit and one half of a lime over ice (if there is a day you’re going to go for fresh ingredients in a drink, it’s today). I poured in a shot’s worth of good blanco tequila and about a half-teaspoon of simple syrup (sugar and water over heat until you get a syrup). I rubbed some of the lime on the rim of a glass and dipped it in some pink himalayan salt and then poured the drink in with an extra wedge of lime and grapefruit. SOOOO good, and I guess you could call it a “skinny margarita” 🙂
