Guys. I LOVE a good salad, seriously love. The more I can add, the better. The other night we had a “fridge clean-out” salad and it came out so delicious I knew I had to share it with you. This quinoa tomato and feta salad is the perfect side (or even main) dish for you and your family. It’s so refreshing and healthy but also really filling!
Here is what you’re going to need:
- 1 cup of quinoa (cook according to directions on package)
- baby romaine lettuce (this is my favorite lettuce, it’s softer and tastes better than Spring Mix IMO)
- grape tomatoes
- persian cucumber
- hard-boiled eggs
- feta cheese
For the Dressing:
- juice of one lemon
- 1/2 cup of olive oil
- seedy Dijon mustard
- salt + pepper to taste
What you will need to do:
